Waffles are a regular breakfast occurrence in our house.  We usually make them pretty normal, with a big dollop of honey and peanut butter on top.  Any extras are frozen for a quick breakfast option later in the week.  A few moments in the microwave and they are warm and ready to eat.  Yum!

This morning as I was gathering ingredients from around the kitchen, I had a moment of inspiration.  I grabbed a few extra items, added to the batter, and ended up with this:

IMG_1546Chocolate banana buttermilk waffles.

Instead of sugar, use 1/2 a ripe banana.

Instead of the full amount of milk, add a few tbs of lemon juice to measure the remaining amount (for example, if the recipe calls for 1 1/2 cups of milk, use 1 1/3 cups and add lemon juice up to the 1 1/2 cup mark).

Finally, sprinkle in a few tbs of cocoa powder.   The more cocoa, the more chocolate flavor will come through.

Straight off the waffle iron they were crisp and chewy, perfectly paired with homemade peanut butter.
